When I'm using FF on my Mac, Catalina OS, and click on telephone numbers in websites, they always open up Skype, which I don't want them to do.

If you go to the Firefox settings page and scroll down to the Applications section, it should be listed in there and you can change the default program. I believe you are looking for the tel content type.
