Perhaps direct Apple issues to Apple. I do not pay Apple for any products, nor have I used one except to read a screen someone shoved under my nose, in the 20 years. So I googled "set default mail client macos" and this was the first result. See https://support.apple.com/en-au/102362 Looks like it answers the question.

You could also use the settings in Thunderbird to check system integration.
