Which version of Firefox do I have to revert to that will allow me to put tabs under the address bar and not have tabs the same colour as the menu bar? I had the current version of Firefox installed, but after doing a Windows reset to the 20H2 version of Windows 10, the even newer version seems to be less customisable.

I have had to use a stylesheet for some years to put tabs under the address bar. Check that the following setting in about:config (enter in the url bar of a new tab) is set to true: toolkit.legacyUserProfileCustomizations.stylesheets

I discovered I actually had my address pane below the tabs, so it's back to the way it was before I had to do a Windows reset. Also using the default colour scheme rectified the tab and menu being the same colour. My scroll bar is odd though with reversed colours for the scroll handle, light grey on darker grey.
