how can I stop thunderbird synchronising an account
If several accounts are set up how can individual ones be stopped from synchronising until needed. For example I look after a friend's email when that person is on holiday so I don't want to sync with that account all the time. Many thanks.

There is not way to disable an account set up in Thunderbird.
If the account is set up in Thunderbird to use POP, then you can tell it not to check for new e-mail.
You are probably using IMAP, though, and there is no way to tell Thunderbird to not updated the account's IMAP folders. You can tell Thunderbird to not store any of the e-mails for that account on your computer, but just like e-mail on a phone, you will still see the e-mails in the folders.
The best thing for you to do is remove the account from Thunderbird. If your friend wants you to be able to access their e-mail account again in the future, you can set the account up again in Thunderbird.

There is no on/off enable/disable switch for email accounts. Whilst you can clear the settings for automatic collection of messages, there is still a danger of manually tidying a download.
I think the most sure way to disable an account is to delete all its passwords. You will get irritating prompts to fill in the password, but until you do, Thunderbird cannot connect to the server.
