Is there a way the change the color of the selected text in a search?

When I search a web page for a specific bit of text, it sometimes is very hard to spot the found text. If it could be made a brighter color or a flashing color, I think it would be easier to locate. David-E

Does the same happen if you try to select text with the mouse on pages where this happens?

If the website uses a background (PNG) image with a white color then you may not see the selection color clearly.

Can you post a link to a publicly accessible page (i.e. no authentication or signing on required) where you notice this?

Does it help to click Highlight All?

There is a very comprehensive add-on named FindBar Tweak that includes changing the color of the highlight on the matched result. I noticed it has not been updated for a while, and the author has provided a new "beta test" version with more features. You can install the old version and if it doesn't do what you need, then check out the test version (which is likely to have many unfixed bugs).
