Assuming your attachment is a Word document, you'll need to protect it using Word.
You can also compress the document with e.g. Winzip and protect the archive.

This is nothing which can be done with Thunderbird.

You can send password protected documents as an attachment to an email message. You cannot password protect an email message itself.

Email encryption would probably make most sense in your case.

I don't see where the attachment can be protected.
