When closing Firefox, all pages close -- how do I close one at a time?

If several pages are open, when I hit the "X" to close out, Firefox closes all the pages at once. Why can't I close one at a time?

Make sure that you do not click the close X on the title bar.
That can happen if the tab bar is on top and the menu bar hidden with the orange Firefox button and the tab bar showing instead of the title bar.
If you click that close X then you close the current browser window with all tabs in it.
You need to click the close X on a tab or middle-click or press Ctrl+W a tab to close a tab.
