I'm using Thunderbird with my GMail account. I've added all the GMail folders and can access them without any problems. However, I'd like to add a new folder. Is it possible to do that in Thunderbird or do I have to log into my GMail and do it there? I'm using Thunderbird 145.0 on Windows 10 Pro 64 bit.

You can create new IMAP folders in Thunderbird. They will synchronize with the server, which will synchronize with other e-mail clients.

By the way, a common suggestion on this forum is not to subscribe to gmail's allmail folder because it increases storage requirements to keep copies of messages that are in other folders anyway.
