Very upsetting that I cannot change the size of the icons and the fonts, plus I can no longer add the DELETE button up at the top of the screen, nor can I access the buttons to customize in the area above the message pane. I do NOT like this new version but don't know how to get a previous version on Ubuntu 20.04. This is now very difficult to see for a visually impaired person.

Chosen solution

Open Config. editor from Edit/Preferences/General/Indexing, right-click the preference layout.css.devPixelsPerPx, Modify, and change the value to 1.25 or 1.3 or 1.4.... The setting takes effect immediately, so you can keep the editor open while adjusting the value.

Click the 3-bar menu icon in the upper right, Customize, Toolbar layout, drag the Delete button onto the Mail Toolbar.

To customize the buttons on the Header Pane, use this add-on:
