Update question: Today I got an update window and I tapped Do Not Install but apparently it did anyway. Now my open tab handles are not delineated like they were, the typeface on them is harder to read, general appearance things that don't seem to be controllable in preferences.

You may wish to try a theme from https://addons.mozilla.org/ that is more to your liking.
