How can I revert back to an earlier version of Thunderbird
I was using two add-ons that were very critical to my work and now they are not compatible with68.3.1 (64-bit) which it automatically updated to when I rebooted my computer. How can I revert back to an earlier version that accepts those add-ons.
Also, how do I ensure that it does not automatically update again??

Check that the add-on is enabled under Tools/Add-ons/Extensions, and then right-click the icon in the status bar (see picture). If the status bar is hidden, enable it under View/Toolbars or AppMenu/Options.

See (below image) - I do not seem to get that - there is only "Add on Preferences" and although there is an arrow next to it there is no drop menu from it - it just dead ends....

Got it (thanks!!!) by going to the right side (as you told) and clicking here.....(image below)
When I clicked on add-ons and then profile switcher - then all the options came up. Which is what you told to look for....
(Aside: I did not get that the options from your above image. See the second image I uploaded.)

I have been following this thread, as I am interested in installing an earlier version of TB. My program was working fine until about 2 weeks ago - now it can only receive emails, but not send them out - it blocks my email server. I saw the reply from Sea Mac, giving a link to earlier versions. However, the link was for Mac versions, and I need Windows (10). Can you give me that link, and how do I select a version. I may need to try more that 1 earlier version.
OK, I did figure out how to locate the older versions of TB, and found the executable file for Win(64 bit). I installed the 68.3.1 version, and got the same warning about version incompatibility. I read the articles about creating multiple profiles and did relocate my original default profile to a new location. I then installed the 68.3.1 version, with the intention of reinstalling the old default profile. However, I got hung up with this version, having trouble setting up the email account (which is the whole reason for this exercise). The program gave me new settings for incoming and outgoing parameters, and then gave me the message "incoming server already exists" (?). When I configured them manually with the original parameters that I had been using for years, the error message said TB couldn't find the settings I specified. Does this make any sense? Any help would be appreciated.

I advise you to file a new support topic since this one has already been "Solved" and Closed and no one will answer it..
Is there an easier way (than the above) to safely revert to the version of Thunderbird prior to the absolutely mindlessly horrible version 68.5.0. for Mac? (And parenthetically, and I suppose, rhetorically, what on Earth possesses Mozilla to create an update which wipes out pretty much every add-on? I mean, what an unspeakably dumb move for a software company that supposedly fosters community support and relies on add-on developers. Ugh.)
Here is my version of this thread. After the last TB update to 68.5.0, I lost all my stored folders and my Address Book. A friend helped me find the lost folders in my Profile and somehow got them restored. However when I rebooted my MacBook, Thunderbird acted as though it was starting up for the first time and those things were lost again.
Next, on advice from this site, I deleted TB 68.5.0 and then downloaded 60.9.1. At first I had success, and all my files were restored, but then it automatically updated back to 68.5.0 even though I had said that I wanted to be asked before an update. I have tried this a couple of times, and it always goes to automatic update.
You can probably tell from my explanation that I do not have a lot of experience in such things, so I need step-by-step help that does not take for granted that I understand what I am doing. Thanks.
