Is it possible to just request a one time read receipt for an email rather than select "when sending messages always request read receipt" ? I don't need a read receipt all the time but once in a while I need one.

The Options menu is present in the Write (message composer) window for either plain text or html messages. Press Alt if the Menu Bar is hidden.

ok thank you. It was ticked - so how come I never receive read receipts?

Read receipts aren't always reliable. Your recipients may have read the message on a device, e.g. a phone, that doesn't support receipts.
