I have installed Thunderbird on my MAC (OS X Yosemite) in French and now I need to change it to english. To setup my email account wasn't easy so I would like to know if there is a way of not having to do it again.

Your settings are stored separately, in the profile. So you can replace the program itself and the settings will stay in place.

I'd say just install the English language version. I don't think there is any benefit in removing the French version first.
