Thunderbird not displaying font colors

I don't see this addressed recently and the fixes from previous versions don't work. Using Thunderbird 140.5.0esr (64-bit) on Mac OS Monterey 12.7.6. Since T-bird updated I have not been able to change font colors or highlight font any outgoing email and I can't see colors in my incoming emails. I can copy and paste incoming emails into a word document and the color formatting shows up. If I write an email in a word document, change the color then copy and paste this into an outgoing email it reverts to black font. I can change bold/italic/underline.

I disabled my two extensions and tried again - no change either sending or viewing received colors

Under Settings > Composition > HTML Style "Use reader’s default colors" is checked and under > Sending Style "Both HTML and Plain Text" are checked

Go to Settings > General > scroll to bottom and click the Config Editor button. Search for the preference browser.display.document_color_use and tell us its number.

It is set to zero. Going to try toggling it to...1?
