I do not want to use Thunderbird anymore. So I deleted my two mail accounts, but thunderbird still remembers them - this I do not want. And how can I close thunderbird definitely, thunderbird also forgot already the main password... Thanks for help!

Just uninstall Thunderbird altogether via the OS interface. In Win11, that would be found by clicking the Start button and searching for: installed apps. Scroll down to Mozilla Thunderbird > click the meatball menu (...) to the right > Uninstall. Also delete user data if prompted to do so.
