Do you mean update your phone number in your signature or in the Thunderbird Address book?
Probably the same problem I have, trying to add a new Gmail account to Thunderbird -- for security it wants to text my phone but it shows my old phone number, and there's no other option like an email -
the question is how do we change our phone number that's
attached to our entire Thunderbird account so that the security text will go to our new phone number
