IMNO both are a PITA.

How can I suppress all threating and grouping in my folders?

No idea how they appeared.

Grouping by sort is active and I cannot uncheck it.

Threading, unthreading, and group by sort are mutually exclusive on the sort menu. Are you saying that if you tick 'unthreaded' that the tick mark stays with group by sort?
