Is this about extensions on the addons.mozilla.org (AMO) website that aren't part of the recommended extensions or about extensions hosted on third-party websites ?

For extensions hosted on the AMO website, you can check the reviews and number of users and possibly visit its support website.

You need to use Developer Edition with xpinstall.signatures.required set to false in about:config.
