Until I just updated, I was able to have the option for a 'return receipt' which let my customers verify they had received my email. Now I can't find any option to do this. It's important if I'm sending invoices or catalogs, etc.

In a Write' window it is exactly the same as before. Options > Return Receipt
Default settings: Menu app icon > Options Select 'General' In top right search type: return OR Scroll down to 'Reading & Display' section
'determine how thunderbird handles return receipts' click on 'Return Receipts' button choose settings and click on OK
