Your email client keeps cookies in the same way it has always done. The change is that managing them is not something that can be done in the user interface.
I would assume you have a Google mail account of a google calendar if it is trying to log into google. I has no reason to connect to google other than to get your mail or calendar data, and that is something you must configure, so you will not be a stranger to the existence of the calendar or email address. It might even be a chat room, but it is unlikely as your so against "web crap"
So instead of ranting, perhaps you could elucidate exactly what is happening so I can actually answer your question instead of talking in generalities because you have offered no detail.
Be aware that Gmail, Yahoo and AOL now use oAuth to authenticate instead of the traditional user name and password. This authentication method does require cookies. SO it may be your choice of mail provider that is at issue, not Thunderbird's response to their changes.
