What version of thunderbird are you currently using? What OS do you use ?
Is your Adobe Reader version up to date?
Does Thunderbird have the correct setting?
- Menu icon > Options > Options > Attachments > 'Incoming' tab
- Adobe Acrobat Document : Action 'Use Adobe Reader'
- click on OK
Does your Anti-Virus software scan thunderbird folders or incoming emails? Suggest you make thunderbird profile name folder exempt from scanning.

Try to save the PDF attachment to disk and open it with the PDF reader application of your choice. Thunderbird cannot open PDFs, a third party application such as Acrobat Reader is required for that.
I am aware that thunderbird does not open pdf`s but up until last week could open attachment just by double clicking and it would open in adobe reader now I cannot open any of them!!! they are in a folder i created to keep my wage slips now cannot open any so something has changed in thunderbird!!! sorted it told it to open in chrome at least i can now see them again
