Where does he Organization field appear in my sent emails?
In the Account Settings main page there is a field called "Organization". I put some text in that field and press OK. I restart TB and check that the text is still there and it is. I then send an email from that account to another email address. I get the email delivered to the other address but do not see the "Organization" text in that email. Where should I see that text?

I think the "organization" field is specific to the address book and like many other items stored there (e.g. street address, phone number) it's there for your convenience but plays no part in email communication.
There is an Organization header that is visible if you select View/Headers/All, or view the Message Source (Ctrl+U) in the received message.
