When I now open Thunderbird, all the emails I have recently opened are tabbed across the very top of the screen. I don't know why this happens, I don't know why I need it, and I don't know how to stop it from happening.

Start closing message tabs after you read the message. If you don't you end up with what you see now. Thunderbird opens just like you close it so if you open dozens of message tabs and do not close them, Thunderbird will open just like that next time. The easiest way to close multiple tabs is to right click one of them and select Close Other Tabs.

At the top right of the Thunderbird window, click the menu button > Options > Display > Advanced > Reading Open messages in: Select 'A new message window'

And delete all those message tabs except Inbox.
