You can get a reasonable selection just using the Thunderbird Formatting Bar. see images as example.

You can just paste the URL. You can use the Insert|Link menu option to create links like this. These will be clickable links in the sent message.

But your links will not be clickable in the composition window. That is an intentional design feature. If you want to check a link, you'll need to save the message and view it in Drafts, or send it to yourself.

Is there a full rich text editor like the one in Outlook?

All of those are available, either through the Formatting Toolbar, or in the Menu. You will, of course, need to enable composition using HTML formatting, but that is the default configuration.

If the provided toolbar is not satisfactory, there are add-ons to add buttons or features. I use this one (below) that adds font size and face selections.

I'd also suggest you look at the Stationery add-on, which lets you define templates as html/css documents, where you can set styles and default font faces, sizes, weights and colours.
