In the traditional menu, View|Folders|All would be the default layout.

If you don't have the traditional menu, F10 or <alt>+v should show it temporarily. Or a right-click on the top titlebar should show a dialogue where you can select the menu.

In the "hamburger" menu, Folders|All will get you to the default layout.

But you should be able to start a new message from the Unified Folders view. What is stopping you?
