Theme Font & Size Changer is an add-on. You can download it here or install it directly from Thunderbird.

You need to find your way to the display/formatting setting.

[≡]Options|Display|Formatting→Advanced

or via the old-fashioned menu,

Tools|Options|Display|Formatting→Advanced

At the top, where it says "Fonts for", choose "Latin" then set the Minimum Font Size option. The number will depend on your display type and system text settings; I'd suggest 15 as a starting value, but you may need to increase it further.
