I am guessing your locale in the operating system is not Sweden, or at least that is the only time I am aware of that updates mess with the installed language

Just download and install the Swedish version to switch it back. https://www.mozilla.org/en-US/thunderbird/all.html

There is no Language pack for Swedish that I can see https://addons.mozilla.org/en-us/thunderbird/language-tools/
