How do I stop single quotes changing immediately to double quotes in emails eg don't becomes don"t

Every time I type a contraction eg won't, it immediately changes to won"t. I'm fed up manually changing all my messages to the proper single quote in contractions.

Check to see if you have any addons. It may be that one is attempting to edit outgoing messages.
