I'm not sure if this is a new feature in Thunderbird or whether it's due to me setting up a new account whose server was IMAP - but either way...

Sent and received emails used to appear in their own (linear) list but I'm suddenly finding that sends and replies are appearing now in something called a Collapsed List. These can end up out of sequence and (I assume...) it's not possible to delete one entry without deleting all the entries underneath it?

So is there a setting somewhere where I can go back to the original linear arrangement?

You might check view>sort by and see if 'threaded' is ticked.

To share a bit more: threading has been the default since summer of 2022. This is the official (to my knowledge) documentation. Well worth the read https://support.mozilla.org/en-US/kb/message-threading-thunderbird

To change default for *new* folders, In config editor, you can change default that applies to NEW folders you set up:
mailnews.default_view_flags      0 =unthreaded  

Config editor is available at Tools>settings>general and scroll to bottom right. 

Here is another way to change the threaded option: 
- create a simple text file with name of user.js with these lines: 
     // Set default threading to UNthreaded  ###   <== this line is optional, just for documentation
     user_pref("mailnews.default_view_flags", 0);
- install Thunderbird and exit prior to setting up accounts	 
- copy the user.js file into the profile
- now, when you start Thunderbird, unthreading will be the default. Problem solved.
