Setting a default font for outgoing emails
I've been using Thunderbird version 155.0 with only a few issues (reported in other posts).
To investigate one of the issues I've had to create a new profile for testing. I've managed to set everything up except for my default font for outgoing emails. If I send an email with say, four lines of text, I can format each line to be a different font and the received email reflects the different fonts for each line.
But Thunderbird isn't remembering the last selected font. So if I send a second email (without re-selecting any font) the recipient receives it in some naff mono-spaced font. I guess there's somewhere where I can set up the default font for my outgoing emails but I haven't managed to find it yet. Can anyone help?

A bit more info...
If I click on the 3 horizontal lines (top, right hand corner) and and I select Settings->Composition I can set a default font within the HTML Style option (and the selected font does get used when I'm composing a new draft).
But as soon as I press Send the font in the sent email has somehow gotten changed to a simple mono-spaced font unless I select my text while composing the draft and I specifically assign a font to the selected text.
I only see this behaviour in the newly created profile. It doesn't happen with my original profile. So might there be something else I need to set up?
It is important to consider whether your font choice is for you, or for the recipient. In most cases, I recommend letting your recipient make that decision. Unless your priority is setting font for recipient, I encourage leaving the settings at settings>composition alone, That default is 'variable width' font and medium size font. That translates to "DO NOT send font style or font size.' Most users appreciate that.
Now for what you see, I suggest visiting settings>general and reviewing the font options there. That is where you control what YOU see. All the details are at https://support.mozilla.org/en-US/questions/1462509 Follow them carefully and you will end up with your choice of emails look when composed and when saved. You're a genius @david, that was exactly what I needed. I compared the settings for my original profile and the newly created one. Inside Settings->General->Language & Fonts->Advanced the setting called Use fixed width font for plain text messages was enabled for my new profile and disabled for the original one. So I disabled it for the new profile and that fixed the problem!
I wouldn't have found it in a million years without your help. Thanks!

I don't understand any details of the "cure" provided to the original poster. See my screen shots of how my email appeared after I had complete it, saved in drafts, and then sent it!! This is its appearance after I opened it from the "Sent" file folder.
It most certainly did not look like this on my screen or in the body of the message when I saved it and when I sent it.
I set everything to be sans serif; Arial or Tahoma, 14 point, fixed width in the settings.
So, how is it my own composition is so disjointed?? And very unprofessional!! I tried repeatedly to get the font size and settings while composing this and it seemed Thunderbird was fighting me with every keystroke!
I do not like using Thunderbird any more. I used to access my email using Earthlink's email server options, but it no longer supports Firefox. I used Thunderbird as my offline email file management tool, with occasional emailing from it without using Firefox to access my earthlink.net server.
I am not a computer programmer. Why can't it be simple and easy to set up how I write a simple message? No emojis; pictures, media, etc.
