How do I fix (or go to an earlier version) when my video keeps getting slowed down with updates?

I've done recent updates (May 2026) and after having 3 updates in recent months, I still have difficulties with my video programs (both Zoom and "One-click) slowing down during my work which is 100% virtual. How can I revert to an earlier version where this was resolved, please!!??
