Auto-update turned off but keeps updating on its own
One HUGELY annoying issue with Firefox is it's incessant desire to auto-update in the middle of my work! I have disabled this "feature", opting to be notified when there are new updates so I can choose when it will be less inconvenient. However, Firefox has opted to ignore that setting and still auto-updates, often when I'm in the middle of a project. This has to be fixed. What can I do to insure that Firefox obeys this setting?

If you don't run on an enterprise deployment, don't run multiple profile instances simultaneously, and don't use "developer" tools (automation, console etc.), this should not be happening — see e.g. support.mozilla.org/questions/1587819 for thing to look for.
