Right in the middle of a session my Firefox showed a brand new screen saying it had been updated and everything (data wise) is gone!

My Firefox created a new profile and reset everything. I was able to go back and locate my bookmarks and restore them, but my menu bar is reset, my history and saved passwords etc are all gone.

Did you find the older profile intact?

You said you got your bookmarks back, how did you do this? From an alternative Profile.

There is the inbuilt option to access profiles via entering about:profiles in the URL

Thank you for the suggestions... Oddly the profile I needed was not the one that appeared in the list of available profiles. I searched in AppData/Roaming and found one of the profiles listed was dated the previous day. I then copied the entire folder contents over to the new profile and recovered everything including saved passwords and history. The bookmarks were in a Bookmarks backup folder under the other profile.

Sure would like to know why it did that. I had been using Firefox the previous 3 hours with no issues when it popped up and said there was a new version. I didn't tell it to update, I just closed Firefox to do something else. A few minutes later when I opened it back up everything was gone and it told me about all the "new" features in this version.
