I have email filters set-up to delete any emails from senders who are not in my address book. However, if the email is missing the sender ("From:" tag missing) the email is retained. I would like an option to create a filter based on missing "From:" tag. This would help protect users from scams and junk emails.

Getting creative may resolve this. I haven't confirmed this, but you might try setting filter for FROM does not contain @
