See <Settings | Composition | Addressing> and disable the "Automatically add outgoing email addresses to" option.

I'm not aware that Thunderbird can be made to collect incoming addresses with the aid of an add-on.

By the way, I meant to say, "I'm not aware that Thunderbird can be made to collect incoming addresses WITHOUT the aid of an add-on." But I think you figured that out!

There are, in fact, add-ons that can harvest addresses from a folder, including the Inbox, for addresses. Which is not what you were talking about, I know.
