I want to change my default search engine to Bing (as I used to have it) and for Bing to be my homepage that opens when I select a new tab (as I used to have it.)

It's easy to change your default search engine to Bing, because that's built-in. See: Manage Firefox search settings. With Firefox's built-in new tab page, that will change the search box to Bing.

Having the Bing home page as your new tab page requires an add-on. I can't find one for Bing, but Microsoft has one for MSN. If that would be useful: https://addons.mozilla.org/firefox/addon/msn-dhp-ntp-bing-dse/

Otherwise, here is a general purpose extension to choose any URL for your new tab: https://addons.mozilla.org/firefox/addon/new-tab-override/
