I select plain text but my emails are still showing the html as parsed/graphics.

For security HTML cannot be displayed AT ALL, NO PARSING of incoming emails is allowed to take place AT ALL. NONE, I mean did I mention, NO PARSING, i.e. security holes can be done.

Why when I set it to plain text is it still parsing HTML?

Puzzling. I've used Thunderbird for two decades and this is a first to see for me. You're seeing HTML attributes, such as bold text and colored text, in messages, even though you have set view>message body as plain text? I would not call this a bug, since I've seen this nowhere else. What version are you using? If you send a message to yourself with bold text, it displays that way?
