Hello. I can't seem to find a way to do this. I want to use a HCT in windows but want FF to IGNORE this and act as it normally would with a normal windows theme.

That's it really. The changes FF makes when it detects a windows HCT, I'm sorry to say, can mess up the appearance of many websites. Removing pictures etc. As I say, I want it to do NOTHING different if I use a windows HCT.

P.S. I have tried messing around with whatever colour options I could find, but can't seem to find what I am looking for.

Try the "Never" setting:

  • Options/Preferences -> Content : Fonts & Colors -> Colors : "Override the colors specified by the page with my selections above"
