I have selected three folders as favourites and these are confirmed by a tick beside the folders when I right-click. However, when I select the 'Favourite Folder' view nothing is displayed, What am I doing wrong?

Try this: 'Menu icon' > 'Folders' > 'Favourite' ....not 'Favourite Folders'.

or via 'Menu bar' Toolbar.....'View' > 'Folders' > 'Favourite'
