We are sending(employees) emails with different languages(Arabic, English, German, Turkish and other). However, some of the language sentences turn to '?????' in the emails when clients receive it. Attached screenshot!

I have tried all of the options like changing the fonts in HTML(lang attribute) and using Plain/HTML for message writing. All failed.

Try changing our font to something other than Arial

Same issue. I think because of encryption while sending email? Or Thunderbird doesn't support other languages?
