I have a current version of Firefox (v123.0 running on Windows 10) but I can't do what I used to be able to do? (And it is making me nuts!)

I used to be able to resize the contents of a site - such as youtube or wordpress or tumblr - there would be a little % on the far right of the URL bar, and I could adjust that until the site was readable and all the pieces I wanted fit in. I can't find a control that will change this for me in the new version. Is it somewhere else? Did that control not port into the new version? Is is gone for good? (I really hope not!) I realize this is such a small problem, but it affects how I interact with basically every site online.

What makes this extra frustrating is that I'm not even certain I am using the correct terms for the thing I want -

Thank you for your patience -

That '%' in the address bar appears when you zoom the page in (Ctrl + +) or out (Ctrl + -).

You can find a Zoom control in the customize page and drag it to a toolbar or to the overflow area.

Addenda: I can use control-minus and control-plus to change the size of the text on a page, but that does not change the size of everything on a page, which is what I used to do. Just to be clear.

Thank you! zoom was set to text-only and it was driving me mad!! I fixed it, it works the way I want it to again, and I added the zoom controls back. Thank you thank you!!

Note that best is to leave zoom at full page zoom (i.e. remove the tick on "Zoom text only") to prevent issues with pages that position text absolutely, same with modifying the minimum font size from its default setting of 'none' to prevent issues with pages that specify padding and margin values as font size depended 'em' units.
