Chosen Solution

To change the font in signature, you must use HTML in the signature. Here is an example. Use the <b> at end of each line. Here is a simple sample: of a sig with two line: <span style="font-family: Arial; font-weight: normal; font-size: 12px; font-style: normal; text-decoration: none;">Regards, <br> david</span>.

I am unsure of the second question. You could set your default to Arial in settings>general or select Arial in compose window. Maybe I am not understanding the question.
