It sounds like you're creating an HTML-format message and you're using Paragraph Style, rather than Body Style. That can be changed while composing the message by selecting the different style from the drop-down list at the left of the composing window toolbar.

The default style can be changed in ([in Windows] - <Tools | Options | Settings | Composition | HTML Style | Use Paragraph format instead of Body Text by default>.)
