I accidentally restored Firefox and everything is gone. All the help topics reference old Firefox data folder but it isn't in my profile. What can I do?

If you had profile sync enabled before hand you get your data back.

The Old Firefox Data folder is on your desktop. See the articles for copying data from the old profile in that folder to the current profile. You need to do that with Firefox closed.
