Either use Shift+Enter to create a single spaced line or change the paragraph mode from Paragraph to Body Text.

You can also set this by default from the menu Tools -> Options -> Composing -> General -> HTML and un-check either "Use Paragraph format instead of Body Text by default"

I want to control line height (or spacing, if you will). This has nothing to do with the behavior of newlines, it's about pasting from another document and preserving the format, whether single- or double-spaced.
