I want to use furefix search but it keeps using google - why is this & how do I use firefox without google butting in?

In Firefox you can use any search engine you want. Just set up your default search engine in Settings -> Search.
Oh, do you think that there's anything like firefox search? No. Firefox is a browser.

As said Firefox is a web browser while the Google you are seeing in Firefox is a search engine.
You can change to another of the default search engines or install a new search engine in Firefox. https://support.mozilla.org/en-US/kb/change-your-default-search-settings-firefox
