Meaning--

Every time I go to save a file I can only save as the default image type. For example, if it's a .jpg I can only save it as .jpg and not .png like I could in years past. This has been bothering me for a couple of years now and I was just wondering if there was a way to make this available.

How are you acquiring your photos ? If using mouse right click it is save as.

I am using the tried and true method of "right click-save as."

Firefox saves what you tell it to save in the format that is presented to Firefox; Firefox doesn't have the ability to convert images to a different format. You would need an external (to Firefox) program such as G.I.M.P. to do the format conversion.

In the past there have been a few different extensions available for Firefox that would "link" Firefox to that type program via a contextual menu item that was added to Firefox and "linked" to the user's choice of an external application, but with the current transition to WebExtensions I don't think there is currently an extension with that type of feature.
