You have to compose messages in HTML format in order to apply colours, styles and other formatting. The default format is set under Tools/Account Settings/accountname/Composition & Addressing.

Hello Eric

This is what yo have to do. Select the text you want to change the color. Then on the menu bar Click on Format and click on Text color and select he color you want to set.

You will see that there are several options such as text size, color font etc.
