Conversations sortable on arbitrary fields
Many times, I have a conversation with many messages. I may want to sort the array of conversation fields on any field. Currently, if I click on any field name, the conversation collapses.

You seem to be referring to threading. "Threaded" is a sort order. It's not possible to sort by "threaded" and sort on a field at the same time. When you sort threaded conversations on a field, it's the conversations that get sorted, not the messages within the conversations.
I don't know why the conversation collapses. That doesn't happen on my installation.

You must be using cards view instead of of table view. The conversation does collapse in cards view when one tries to sort on a field.
The hierarchical sort order of a threaded conversation is more apparent in table view.
The "conversations" view may do more of what you want. You may have to customize the top toolbar to put a button for conversations there.
I believe that the implementation of conversations is incomplete and buggy. Developers are working on a new version.
