I use the Signature Switch add-on. It is useful in being able to hold both plain text and html formatted variants of your signature in one file.

Another approach is to compose your alternative signatures as text snippets and use an add-on such as QuickText or Clippings to paste them in. In Clippings (I haven't used QuickText) you can set up keyboard shortcuts for frequently used insertions.
